This quick and healthy recipe is great breakfast or snack option. It is even better to be given in children’s lunch box. Below is a simple version, you may add any vegetable like carrot, broccoli, bell pepper, beans, corns, etc. to it to make it a more fulfilling meal. It is so much healthier than the regular noodles or other maida snacks, all it needs is tadka and some paneer. Do try it out!

Ingredients

Roasted Vermicelli          : 1 cup

Water                              : 1.5 cup

Ghee or Oil                      : 2 tbsp

Rai                                    : 1 tsp

Kadi patta                         : 1 tbsp

Peanuts                            : 1 tbsp

Ginger-garlic paste          : 1 tbsp

Green chili                       : 1 (chopped)

Onion                              : 1 (chopped)

Tomato                             : 1/2 (chopped)

Paneer                               : 50 gm (cut into pieces)

Red chili powder              : 1/3 tsp

Black Pepper powder    : 1/3 tsp

Coriander powder            : 1 tsp

Garam Masala                   : 1/2 tsp

Turmeric powder              : 1/2 tsp

Salt to taste

Chopped fresh coriander for garnish

Recipe

  1. Take oil in a pan and put rai, kadi patta and peanuts; and sauté a little.
  2. Now add ginger-garlic, chopped green chilies and onion and cook for 1-2 minutes.
  3. Add tomatoes and paneer pieces and sauté on high flame for a minute.
  4. Add all the spices and let everything mix well on medium flame.
  5. Add water and bring to boil.
  6. Now add roasted vermicelli to it, bring to boil again and cook on low heat after covering the pan with lid for apprx. 5 minutes.
  7. Open the lid and give a slight mix, add chopped coriander and it is ready to be served.
