Let me share one such amazing recipe which not only serves as a great option to kickstart the day, but also is a great choice for kids lunch idea. This beetroot vegetable uttapam is nothing less than a power packed healthy meal.

Ingredients

Sooji or Semolina                          : 1 bowl

Curd                                               : 1/2 bowl

Grated beetroot                             : 1

Finely chopped onion                    : 1/2

Finely chopped capsicum             : 1/4

Grated carrot                                 : 1/2

Finely chopped chili                       : 1

Ginger-garlic paste                         : 1 tsp

Salt to taste

Chaat Masala                                   : 1 tsp

Cumin powder                                : 1/4 tsp

Crushed Black pepper                    : 1/4 tsp

Ghee or oil                                      : 2 tbsp

Eno                                                   : 1/4 tsp

Some Kadi patta and Rai

Recipe

  1. In a bowl, mix sooji, curd and some water. Cover it for 15-30 minutes.
  2. Now add water, all vegetables and all spices and mix till a thick liquid consistency is obtained, which is not too runny.
  3. Now add Eno and mix properly.
  4. Heat a pan and sprinkle ghee / oil on it; add some Kadi patta and Rai and let it crackle.
  5. Pour the batter and spread evenly. Cover the lid and cook for few seconds on high flame and then cook on low flame till it becomes crispy and separates from the pan itself. Flip and cook the other side till crispy.
  6. Serve hot with green mint coriander chutney.
